For the non culinary experts here is your chance to impress everyone with something homemade.

These bite size sweets are perfect to make as last minute Christmas gifts for your friends, colleagues & family.  They look pretty and taste very yummy!

Also, if you’re looking to make a something completely idiot proof then these are it! If I can make them anyone can, plus they involve absolutely no cooking so there’s no chance of burning them.  For the non culinary experts here is your chance to impress everyone with something homemade.

You will:

  • 2 eggwhites
  • 4 cups (600g) icing sugar
  • 1/4 teaspoon peppermint essence
  • 400g melted chocolate
  • Lustre dust is optional

Step 1:

Place eggwhites in a clean, dry bowl and whisk until frothy.  This is easiest with a balloon whisk.

Add icing sugar and peppermint essence.  Using a wooden spoon, stir until mixture till thick and you are able to roll into a ball.

Turn mixture onto a clean surface lightly dusted with icing sugar. Knead until smooth and not sticky; work in extra icing sugar if necessary.

Once mixture is ready roll out until 1cm thick.

Using festive cutters, cut shapes out of dough. Press leftover dough together and repeat.

Leave them on a tray and set aside, uncovered, overnight, turning over once, to allow peppermint creams to dry out.

Half-dip each peppermint cream in melted chocolate (make sure chocolate is not too hot or it will melt the peppermint mixture) and place back on the tray.  Refrigerate until chocolate is set.  Finish them off with some lustre dust for that extra festive sparkle!

As these are predominantly sugar they keep really well so you can enjoy them throughout the whole of Christmas (although whether you can resist them all is another matter!).
